Yorkshire Spice Cake Recipe |

plain flour |
1½
lb soft brown sugar |

tablespoon salt |

teaspoon mixed spice |
| 8oz
lard |

teaspoon grated nutmeg |
| 1½oz
fresh yeast |
4
eggs, beaten |

pints warm water |

| Sift
the flour and salt, rub in the lard and butter. Cream the yeast
with a little warm water, add it to the flour. Blend in the
sugar and the rest of the water, then beat to a smooth dough.
Knead well and leave to rise. When risen, knock back and work
in the spices, currants and the beaten eggs. Knead again, divide
the dough into 3, and put into 3 greased loaf tins. Leave in
a warm place to prove, then bake at about 400ºF (Mark 6)
for about 50 minutes. |
