Yorkshire Sandwich Cake Recipe |

plain flour |
2oz
butter |
| 2oz
ground rice |
2oz
caster sugar |
| pinch
of salt |

egg, beaten |

teaspoon baking powder |
Milk
to mix |

| Sieve
the flour, ground rice and salt together. Take 1 tablespoon
of this and add the baking powder, keeping it seperate from
the rest of the flour mix. Cream the butter and sugar until
fluffy, add the beaten egg, then beat well. Add the bulk of
the flour mix, with enough milk to make a dropping consistency.
Beat again, then add the tablespoon of flour and anking powder.
Pour into greased sandwich tins, and bake in a hot oven for
15 minutes. When cold, sandwich together with jam. |
