Yorkshire Fritters Recipe |

plain flour |

tablespoons milk and water |

currants |

tablespoon sugar |

raisins |

butter |

grated apple |
| ½oz fresh yeast |
caster sugar |

egg, beaten |

fl oz sherry |
| Sift
the flour, salt and sugar together, rub in the butter. Mix in
the beaten egg and the yeast dissolved in the milk and water.
Knead, leave to rise, knock back. Work in the currants, raisins
and apple. Divide into 24 round balls. Leave to prove, then
deep fry in oil until golden brown. Drain, toss in caster sugar,
sprinkle with warmed honey and serve. |
