Harrogate Sponge Cake Recipe |

plain flour |
| 4oz
caster sugar |

teaspoon baking powder |

tablespoons boiling water |

| Beat
the eggs and sugar in a bowl over hot water. When thick and
creamy, add the boiling water and whisk for a further 5 minutes.
Fold in half the sifted flour and baking powder, then add the
rest. Grease 2 8 inch sandwich tins and dust with sugar. Spoon
in the mixture. Bake for 20 minutes at 375ºF (Mark 5).
When cold, sandwich with jam or cream and dust the top with
icing sugar. |
